I got the super fast train from Barcelona to Madrid (300kph) and arrived to a very hot capital. So an early night with some salmorejo soup got me thinking. Is Spain one of the best places in Europe? Spain is a very enjoyable place to travel. It is very clean compared to a lot of other countries. The infrastructure (e.g train and roads) are first class and it's very easy to get around. The people are incredibly friendly and there are the little things such as no advertising billboards on the side of the roads and of course the food is magnificent. Which brings me to the topic of today's blog - Cochinillo (suckling pig). This lunch had been on the agenda since Luis mentioned it on his trip to Australia last September and was eagerly anticipated. The restaurant "Meson de Candido" is in the beautiful town of Segovia and located right along side the Roman Aqueduct. The highlight is the roast suckling pig but for me the best part was the 5th generation owner giving some sort of sermon before using the edge of a plate to demonstrate the roast's crisp perfection on the outside and the meat's melt-in-the-mouth tenderness on the inside. He then smashes the plate on the floor. It was a great meal and a fitting way to say goodbye for now to Maria and Luis.
